What is everyone's preferred BBQ meat choice?

So Sunday, to celebrate the start of a new season, i am hosting my mates with a BBQ, pool table, darts and man cave while watching the Vegas matches. Though i am curious for a fun discussion what is everyone else's go to for the BBQ? For me, a piece of Scotch Fillet, seasoned with salt and a BBQ seasoning which consists of mustard seeds, paprika, thyme, garlic and more that i cannot remember, cooked to medium rare to medium, simply devine. All i can say is on a pan cooked same is my death row final meal, it is heavenly. At the moment, since i bulk buy cuts of steaks with my local butcher, i am stuck with NY strip atm as my butcher sold out on whole Scotch Fillets. NY is good, but cannot beat the Scotch Fillet.

Of course, cannot go wrong with sausages, ribs are good too, as well marinated chicken. But also smokers are becoming a thing. My mate hosted Australia Day at his and had a brisket in the smoker along with a BBQ. 

And finally, a drop of golden ale also, with at the moment i have a case of Toohey's New and Coors (American beer) to get through. Both my favourite drops of beer.

Let's go with a debate of what is the go to steak if many of you are steak eaters, and are you doing anything on Sunday for the new season?

  • I got a smoker last year and hosted Christmas.

    For steaks, I like a good Scotch Fillet or NY Strip. Salt and pepper, nice and simple but I reverse sear mine. In the oven with a probe till almost at temperature then onto a searing hot pan to get that nice crust.

    For smoking I've done brisket, chicken, sausages, pulled pork, short ribs and bacon. Chicken is probably the easiest and simplest. Spatchcock, season, fridge uncovered overnight. Bang it on the smoker for about 3 hours set at 110c. It will be perfectly cooked, juicy and have that great smokey flavour.

    I've also cranked the smoker right up and used it for pizza. Gives you that woodfired look and taste without needing a pizza oven.

    I have a chargriller kamado from Bunnings.

    • Scotch Fillet is to die for honestly, or as American's call it "Ribeye". My Butcher moved from my local area and went about 15mins up the road but gave myself and family a cut of Wagyu as a thank you for shopping with him. It was nice but man is that cut overrated. I would much rather a Scotch Fillet anyday, 10/10 times i'd choose a Scotch Fillet.

      My mate got a smoker as i mentioned, he swears by it, never uses his BBQ anymore. I know a lot of people who have moved towards using smokers over BBQ's, they are very popular now.

      • I just find my smoker more adaptable than a barbecue. I can use it to smoke meat, make bacon, turn the heat up for a charcoal bbq, or really heat it up for pizza.

        My gas bbq could only bbq.

  • I am a lamb chop fan on the bbq.  Keep the marinade simpe (Garlic,Rosemary,salt pepper and rub in some quality olive oil)  and also dont mind a pork sausage on the BBQ.  

    • Yeah not a big lamb chop fan. I don't mind it from time to time on the pan but not a big fan, particularly how expensive they can be.

      Though i am bias towards a steak. Yeah Olive Oil mixed is beautiful. It's what i do with roasts (Lamb or Pork), Salt, Pepper, Garlic Salt and Olive Oil over the top. Beautiful.

  • Good debate 

    Rib eye for me; basic season with rosemary/ pepper and touch of salt. 
    Basic BBQ; wish to invest in a smoker too; and pizza oven although seeing here smoker can be used for pizza seems ok. 
    Im also a snag man; bloke up the coast at Chirtaway Butchers does a huge range of snags...thick ones and varied favours - love a good snag on the BBQ;

    And my wife loves my cooked onions with some basic olive oil and garlic. 

    • Ribeye is the most popular cut in the world, it is for a reason since it is so bloody delicous.

  • My Dads "mock chicken legs" Recipe. Big hit with everyone that's tried them.

Sorry to complain, but the new site header is doing my head in. Can someone please remove the background from the Ryles image so the border of his image doesn't crop through Moses left arm? My OCD thanks you.
